Add two large diced onions, three large garlic cloves, and one teaspoon of cayenne pepper (if desired). Then, bring the mixture to a boil and reduce heat to low. Simmer for 1 ½ to 2 hours, stirring occasionally.

When the beans are tender, stir in 2 slices of thick-cut bacon, two diced chorizo sausages, one bay leaf, ½-3/4 cup of chopped kale (optional), and salt to taste. Simmer for an additional 30 minutes on low heat. Serve warm in bowls, garnished with freshly chopped parsley, sliced scallions, and freshly cracked pepper. Enjoy!
